Welcome to the finca
265 hectars of pure nature and pure life. Surrounded by untouched hills, which provide a border to our farm. Home for wild rabbits, foxes and birds, wild herbs, mushrooms and asparagus. Green fields for our horses and goats, a lake with ducks and geese, and large olive plantations where we spend our working days 70% of the year.
02
Animals without borders
Our large family of farm animals is living free on this farm without cages, without borders. They provide us with meet, eggs, milk and cheese, and we provide them with a happy and healthy life with plenty of food, freedom and care. We keep chickens, turkeys, guinea fowls and peacocks around the main house, ducks and geeze in our lake. Our goats and horses help us keep the olive trees clean, our dogs protect our animals from predators, our cats keep away mice and rats from our home.
03
Meet our team
We are an enthusiastic international team of friends. Some of us are here since many years, some come and go, some completely new. All are in love with this place, eager to learn, and hardly get tired. Our volunteers come from all around the world; Europe, Asia, South America, Canada, United States, Australia or New Zealand. We do so much more than olive harvests, our work never ends. Gardening and animal care, training and breeding horses, endless building and renovation works, and the production of our food completely from skretch. These are just some examples of various tasks we face and the skills we master.
04
Harvesting, milling, pruning, bottling
We start with cleaning around our trees in early autumn, making them accessable for the harvest, clean and inspect the mill, regularly check our trees and make a plan for the harvest. In october after the first big rains we start harvesting, only taking breaks when the wet weather does not allow us to continue. We mill our daily harvest instantly, and store the oil in our deposits. In December we start milling infused oils, we harvest the remaining olives in small batches, collect the herbs and spices, turn them into a fince powder or paste, and mix them with the crushed olives in the mill. We let the mixture turn together the whole night, and extract the infused oils in the following morning.
Later it is time to collect the wild olives, also in small batches. With the milling of the wild olives our harvesting season ends in January, but we do not leave the olive plantations. We continue directly with pruning our trees, section by section until we finish with the whole farm in late spring. In this moment our trees start blooming and we leave them alone until the end of summer. But our work is not finished yet.
We return to the mill and start filling our oil into bottles and tins, ready to share our product with the rest of the world.
